This term came to life in print in 1970 (whereas ‘mellow yellow’ has been with us since the early 1800's). Saying ‘mellow out’ is asking someone to calm down or relax. Mellow originally referred to ripe fruit, so mellow out is like a command to ripen, or mature to peak goodness.
